    Bread sauce

    Infuse the milk on Christmas Eve, then cover, chill and follow the recipe from step 2 the next day to save time.

    • Preparation time: 5 minutes, plus infusing
    • Cooking time: 10 minutes

    Serves: 6 - 8

    Ingredients

    1 large onion, halved

    8 cloves

    3 fresh bay leaves

    15 peppercorns

    1/2 tsp freshly grated nutmeg, plus extra to serve

    568ml whole milk

    150g white breadcrumbs

    Method

    1. Stud each (peeled) onion half with 4 cloves; put in a small pan with the peppercorns and nutmeg. Scrunch up the bay leaves and add along with the milk. Bring to a gentle simmer, remove from the heat and cover. Infuse for 30 minutes. Remove the aromatics.

    2. Add the breadcrumbs. Season, then heat through until piping hot and thick, adding more milk if too thick. Serve in a warm bowl topped with extra freshly grated nutmeg.
