    Bread Sauce

    • Preparation time: 10 minutes, plus infusing
    • Cooking time: 8 minutes
    • Total time: 48 minutes 50 minutes

    Serves: 8 - 10


    • 1 medium onion, peeled and halved
    • 6 cloves
    • 1 bay leaf
    • 6 black peppercorns
    • 2 sprigs thyme
    • 568ml carton whole milk
    • 175g fresh white breadcrumbs
    • 25g butter
    • 2-3 tbsp double cream
    • Salt and freshly ground black pepper


    1. Stud the onion halves with the cloves. Put in a pan with the bay leaf, peppercorns, thyme and milk. Bring to boiling point, then remove from the heat. Leave to infuse for 30 minutes.
    2. Strain through a sieve into a clean pan. Reheat to a simmer.
    3. Add the breadcrumbs and simmer gently for 5 minutes, stirring, until thick.
    4. Add the butter and cream and stir over a low heat until the butter has melted. Remove from the heat, season and spoon into a warmed serving dish.
    5. To save time on Christmas Day, the infused milk can be made the day before, strained, stored in the fridge and then reheated as above.
