    Break-all-the-Rules Shortcrust Pastry

    • Preparation time: 10 minutes, plus chilling for at least an hor or overnight
    • Total time: 1 hour 10 minutes 60 minutes 10 minutes

    Makes: 750g pastry


    • 225g softened butter
    • 55g caster sugar
    • 2 large eggs, preferably free-range
    • 340g plain white, unbleached flour


    1. Cream the butter and sugar together using a wooden spoon, or in a food processor. Do not over mix. Add the eggs and beat for 1-2 minutes, then mix in the flour to create a smooth dough.
    2. Turn out onto a large piece of floured greaseproof paper, flatten into a round, and wrap in the paper. Chill for at least an hour, or overnight, before using.
