Break-all-the-Rules Shortcrust Pastry

Ingredients

225g softened butter

55g caster sugar

2 large eggs, preferably free-range

340g plain white, unbleached flour
Method

Cream the butter and sugar together using a wooden spoon, or in a food processor. Do not over mix. Add the eggs and beat for 1-2 minutes, then mix in the flour to create a smooth dough.

Turn out onto a large piece of floured greaseproof paper, flatten into a round, and wrap in the paper. Chill for at least an hour, or overnight, before using.
