    Cauliflower and green bean korma

    • Vegetarian

    Serves: 4


    • 1 tbsp vegetable oil
    • 1 small onion, sliced
    • 3 tbsp Patak's Mild Korma Paste
    • 1 small essential Waitrose Cauliflower, cut into florets
    • 150g essential Waitrose Green Beans, trimmed and halved
    • 100ml essential Waitrose Single Cream
    • 50g natural cashew nuts, toasted
    • ½ x 20g pack fresh coriander, chopped


    1. Heat the oil in a heavy-based saucepan, add the onion and cook for 5-6 minutes, until soft and golden. Stir in the korma paste then cook for a minute. Add the vegetables and stir to coat in the paste.
    2. Add 150-200ml cold water, then stir in the cream. Cover and simmer for 12-15 minutes, until the vegetables are tender. Season and stir in the cashew nuts. Scatter with coriander and serve with basmati rice
