Cauliflower and green bean korma

Ingredients

1 tbsp vegetable oil

1 small onion, sliced

3 tbsp Patak's Mild Korma Paste

1 small essential Waitrose Cauliflower, cut into florets

150g essential Waitrose Green Beans, trimmed and halved

100ml essential Waitrose Single Cream

50g natural cashew nuts, toasted

½ x 20g pack fresh coriander, chopped
Method

Heat the oil in a heavy-based saucepan, add the onion and cook for 5-6 minutes, until soft and golden. Stir in the korma paste then cook for a minute. Add the vegetables and stir to coat in the paste.

Add 150-200ml cold water, then stir in the cream. Cover and simmer for 12-15 minutes, until the vegetables are tender. Season and stir in the cashew nuts. Scatter with coriander and serve with basmati rice
