Chargrilled Vegetable Quinoa Salad

Ingredients

20g pack flat leaf parsley

juice of 1 small lemon

225g quinoa
-
3 tbsp olive oil

1 red onion, sliced

1 courgette, sliced

1 red and 1 yellow pepper, deseeded and sliced
Method

Prepare the barbecue to a medium heat.

Toss 1 red and 1 yellow pepper, deseeded and sliced, 1 sliced courgette and 1 sliced red onion in 2 tbsp olive oil and some seasoning.

Barbecue for 6-8 minutes, turning often, until just tender and chargrilled. Set aside.

Meanwhile, put 225g quinoa with 450ml boiling water in a saucepan. Cover, return to the boil, reduce the heat slighlty and simmer rapidly for 10 minutes or until the grains have cracked and the liquid has been absorbed. Set aside covered, for 5 minutes, then tip into a large bowl.

Add the vegetables, 1 tbsp olive oil, the zest and juice of 1 small lemon and 20g pack flat leaf parsley, roughly chopped, and gently mix. Check the seasoning and serve.
