Chicken Tagine with Couscous

Ingredients

2 x 350g pouch Waitrose Moroccan vegetable tagine soup

500g British free-range chicken breast fillets, cut into chunks

200 g couscous

150g pack Waitrose Pomegranate, from the bagged salad section

3 tbsp fresh, roughly chopped mint
Method

Pour the soup into a pan, stir in the chicken and bring to the
boil. Simmer, stirring occasionally, for 10 minutes, until the
chicken is thoroughly cooked.

Meanwhile, put the couscous into a medium bowl, pour over 250ml boiling water, then cover with clingfilm. Set aside for 5 minutes to absorb the water, then fluff up the grains with a fork. Stir in the pomegranate, and mint. Season and serve.
