Serves: 4
340g pack essential Waitrose British Frying Steak, cut into 1cm strips
2 tbsp sunflower oil
½ x 30g sachet Santa Maria Mexican Fajita Seasoning
4 Love Life Seeded Tortilla Wraps
250g pack Tilda Lime & Coriander Microwave Rice
280g jar Cooks’ Ingredients Chargrilled Peppers In Olive Oil, drained and sliced
75g Waitrose Grated Cheddar & Mozzarella
1. Preheat the oven to 180°C, gas mark 4. In a bowl, mix the beef with 1 tbsp oil and the fajita seasoning. Warm a large non-stick frying pan over a high heat. Add the remaining oil, then add the seasoned beef and cook for 2-3 minutes until browned. Leave to cool slightly.
2. Top the tortillas with the rice, peppers, cheese and beef. Fold in the ends, then roll up. Wrap each one tightly in baking parchment or foil and tuck the ends under to seal. Place on a baking sheet in the oven for 30 minutes or until piping hot. Cut in half and serve immediately. Great with soured cream or chilli sauce to dip, and salad.
