Ingredients
-
50g butter, melted, plus extra for greasing
-
100g self-raising flour
-
2 tbsp cocoa powder, plus extra for dusting
-
125g golden caster sugar
-
1 medium egg
-
4 tbsp semi-skimmed milk
-
1 Waitrose Perfectly Ripe Williams Pear, peeled, cored and diced
-
50g soft dark brown sugar
Method
-
Preheat the oven to 180ºC, gas mark 4. Grease 4 x 200ml ovenproof ramekins or dishes with butter and place them on a baking tray. Sift the flour and half the cocoa into a large bowl. Add the caster sugar and mix.
-
Whisk the cooled melted butter, egg and milk together in a small bowl. Pour over the flour mixture and whisk together well. Fold in the diced pear and spoon the mixture evenly between the prepared dishes.
-
In a separate bowl, mix the remaining cocoa and the brown
sugar together. Sprinkle this over the mixture in each dish.
Spoon 2 tbsps of boiling water evenly over each pudding.
-
Carefully place the tray in the oven and cook for 20–22 minutes, or until a skewer inserted halfway into the puddings comes out clean. Dust with more cocoa powder to serve. Great with crème fraîche or ice cream.
