Congo Bars

Ingredients

4 large eggs

225g light brown sugar

2 tbsp vanilla extract

250g unsalted butter, melted

150g self-raising flour, sieved

Pinch of salt

300g dark chocolate, roughly chopped
Method

Preheat the oven to 180°C,gas mark 4 and grease and line a 22cm square baking tin. Whisk the eggs with the sugar until the mixture is smooth and then beat in the melted butter and vanilla extract. Sift the flour and salt on to the egg and butter mix and gradually fold in.

Fold in the chocolate chunks. Spread the mixture out in an even layer in the baking dish. Bake in the preheated oven for 20 minutes until just cooked. There should be a slight crust but you want the bars to be squidgy in the middle. Leave to cool then cut into bars. Serve straight away or seal in a plastic bag and freeze.
