Creamy lentil dhal

Ingredients

1 Onion, finely chopped

Ghee

2 tsp Curry powder

2 Chopped tomatoes

1 Chopped green chilli

200g Red lentils
-
4 tbsp Single cream
Method

In a large pan, fry a finely chopped onion in a little ghee until golden. Add 2 tsp each curry powder, crushed garlic and grated ginger, along with 2 chopped tomatoes and 1 chopped green chilli.

Stir in 200g red lentils, cover with water and simmer over a medium
heat for 35–40 minutes. Season to taste. Stir in 4 tbsp single cream
and a little chopped coriander.

Serve with rice or flatbreads.
