Cucumber Squares with Smoked Trout, Wasabi Crème Fraîche and Onuga

Ingredients

1 large cucumber

2 tbsp rice vinegar

1 tsp caster sugar

75ml crème fraîche

Grated zest of 2 limes

2 tsp wasabi paste
-
125g pack smoked trout, flaked

4 tbsp Onuga mock caviar and/or keta or salmon caviar
Method

Cut the cucumber into 1cm-thick slices, then trim each slice to make a square. Place in a large, shallow dish with the rice vinegar and sugar. Mix well and set aside for 30 minutes.

Mix the crème fraîche, lime zest and wasabi in a small bowl. Place a few flakes of smoked trout on each cucumber square, add a dollop of the crème fraîche and wasabi mixture and a touch of Onuga and serve.
