    Curried Red Lentil and Vegetable Stew

    • Preparation time: 10 minutes
    • Cooking time: 30 minutes
    • Total time: 40 minutes 40 minutes

    Serves: 4


    • 1 tsp Curry powder
    • 1 litre Vegetable stock
    • 100g Fresh baby spinach
    • 200g Red lentils
    • 2 tbsp Olive oil
    • 1 Medium onion, chopped
    • 2 Garlic cloves, crushed
    • 2 tsp Finely grated fresh root ginger
    • 4 Small carrots, sliced
    • ¼ tsp Turmeric
    • 1 tsp Cumin


    1. Rinse the lentils well, discarding any discoloured ones. Heat the oil in a frying pan over a medium heat. Add the onion, garlic, ginger and carrots. Cook for 5 minutes, stirring, or until the onion is soft. Add the spices; cook for 1 minute more or until fragrant.
    2. Add the lentils; cook for 1 minute, stirring. Add the stock and bring to the boil. Reduce the heat and simmer uncovered for 20 minutes or until the carrot is cooked. Stir through the spinach until wilted. Season and serve.

    Cook's tips

    A cheap coffee grinder makes a great
    spice mill. to Clean it out each time, pulse
    a cube of stale bread and discard the
    crumbs. if you don’t have a pestle and
    mortar, use A tough bowl and the end of
    a wooden rolling pin as an alternative.
