    Easy Mousse with Cardamom and Orange

    • Preparation time: 15 minutes, plus 2 hours setting time

    Serves: 4


    • 1 orange
    • Seeds from 10 Bart Cardamom Pods, husks discarded, crushed
    • 2 medium egg whites
    • 1 medium egg yolk
    • 50g golden caster sugar
    • 200g tub Greek yogurt


    1. Use a small sharp knife to remove all the skin and pith from the orange. Hold the fruit in one hand over a bowl to retain the juice and remove the segments by cutting a v-shape either side of each one to produce neat, even-sized pieces free from any membrane. Add the crushed cardamom seeds and orange segments to the juice in the bowl. Leave for at least 5 minutes to infuse.
    2. Whisk the egg whites with an electric or hand whisk until stiff peaks form, then gradually add the sugar a teaspoonful at a time, whisking well between each addition.
    3. Mix the egg yolk into the yogurt and then quickly and gently fold this mixture into the whites using a metal spoon. Lightly stir in the orange mixture.
    4. Spoon into 4 x 200ml dishes or sundae glasses and chill for 2 hours, or until set. Serve topped with chopped Duchy Organic Originals Chocolate Coated Orange Peel (optional).

    Cook's tips

    Make the mousse and chill in the fridge for up to 6 hours in advance. Adding the sugar gradually to the firm egg whites ensures a marshmallow-like consistency with a glossy finish.
