Egg, Tomato, Bacon and Onion Potato Sautè

2 x 400g packs Waitrose Bacon and Onion Potato Sauté

250g pack Baby Plum Tomatoes

Bunch of salad onions

8 eggs
Method

Heat 1 large, or 2 small, deep heavy-based non-stick frying pans and add the contents of 2 x 400g packs Waitrose Bacon and Onion Potato Sauté.

Cook over a medium heat for 10–15 minutes, stirring gently to break up into individual pieces. When the potatoes are starting to turn golden brown, add a 250g pack Baby Plum Tomatoes and a bunch of salad onions, trimmed and chopped.

Make 8 hollows in the potato mixture and, taking 8 eggs, crack one into each. Cover with a lid for 8-10 minutes or until thoroughly cooked. Serve with ketchup.
