traditional partner to game, fried breadcrumbs also make a delicious accompaniment to all sorts of meats. You can leave the pine nuts out of this recipe altogether, or replace them with pecans, walnuts (particularly good with duck) or shelled, unsalted pistachios (great with partridge or pheasant).
