    Gin and tonic

My favourite gin is Hendrick’s and the best tonic is Fever Tree. But use whichever G and T you like here.

    • Preparation time: 5 minutes

    Serves: 1

    • 50ml Gin
    • 150ml Tonic
    • A few lime leaves, fresh or frozen
    • 1 Lime, juice and slice

    1. If using fresh lime leave, bruise before mixing into the drink. If using frozen lime leaves, add 1 tsp to the gin and set aside to infuse for 15 minutes, then strain. Mix the ingredients well and serve with a lot of ice in a highball glass – this stops the drink becoming watery by keeping it too cool to melt the ice quickly.
