Green pepper & vegetable paella

2 tbsp wok oil
3 green peppers, cut into small chunks
2 onions, chopped
3 cloves garlic, crushed
250g Waitrose Bomba Paella Rice
100g Cooks’ Ingredients Paella Paste
2 tsp Marigold Organic Swiss Vegetable Vegan Bouillon Powder
2 x 160g portions frozen Waitrose Garden Vegetable Steamers
25g pack flat leaf parsley, chopped
1 lime, sliced
1. Heat the oil in a large frying pan and fry the peppers and onions for 8 minutes, stirring frequently. Add the garlic and fry for a further 2 minutes. Stir in the rice, paella paste, vegetable bouillon powder and 600ml water.
2. Bring to a gentle simmer, cover with a lid and cook for 15-20 minutes until the rice is tender and the water absorbed. Add a dash more water if the pan seems dry before the rice is cooked.
3. Stir in the vegetable steamers and half the parsley and cook for 5 minutes until the vegetables are tender, then season. Scatter with the remaining parsley and the lime slices to serve.
