    Ground Lamb with Avocado and Tomato Salsa

    You can't beat a warming casserole on a cold winter's day. The slow cooking allows the flavours to develop and mingle. Here is a recipe for those who have less time, a speedy lamb dish that you can cook on the hob.

    Serves: 4


    • 1 onion
    • 2tsp sunflower oil
    • 350g ground lamb
    • 2 Waitrose Vegetable Stock Cubes
    • 1tbsp Waitrose Tomato Puree
    • 300ml water
    • 2 tomatoes
    • 1 avocado
    • 4 slices French bread
    • Garlic


    1. Fry a peeled and finely chopped onion in 2tsp sunflower oil. Add 350g ground lamb and two Waitrose Vegetable Stock Cubes. Stir until no pink meat remains.
    2. Add 1tbsp Waitrose Tomato Purée and 300 ml water. Simmer gently for a further 5 minutes. For the salsa, peel and dice 2 tomatoes and an avocado and add salt and pepper.
    3. Toast 4 pieces of French bread and rub with garlic. Put a spoonful of salsa on each and serve with the lamb.
