Haddock with honey & orange

Serves: 4
½ x 450g pack fine green beans, trimmed
2 x 240g packs Waitrose Haddock Fillets
½ tsp orange zest
1 tbsp clear honey
2 tbsp wholegrain mustard
500g baby new potatoes
1. Preheat the oven to 180°C, gas mark 4. Bring a large pan of water to the boil. Blanch the beans for 1 minute then remove with a slotted spoon. Cool in cold water then drain. Divide between 4 large pieces of baking parchment. Top with the fish.
2. Mix the zest, honey and mustard together. Spread on the fish. Fold over and seal the edges of the parchment to make 4 parcels. Bake on a large baking tray for 20 minutes until thoroughly cooked.
3. Return the pan of water to the heat, boil the potatoes until tender and serve with the fish.
