Honeyed passion fruit Collins

1 tsp clear honey
50ml Edinburgh Classic Gin
30ml lemon juice
15ml Teisseire 0% Sugar Passion Fruit
About 50ml soda, chilled, to top
½ passion fruit, to serve
1 Put the honey in a cocktail shaker with a small splash of hot water; stir until loosened. Add the gin, lemon juice, passion fruit syrup and plenty of ice. Shake until cold. Strain into a highball glass filled with more ice, then top with soda. Sit the passion fruit half on top to serve.
