    Hot-smoked Trout and Avocado Croustades

    To save even more time, you can make the trout, caper and lemon topping in advance.

    • 250g guacamole
    • 24 mini croustades
    • 1 lemon, finely grated zest
    • 1 tsp capers, drained and chopped
    • 125g hot-smoked trout fillets


    1. Flake the trout into a bowl; add the capers and half the lemon zest. Season with black pepper.
    2. Fill each croustade with about 1 tsp guacamole. Divide the trout mixture evenly between the croustades.
    3. Finish with the remaining lemon zest and some more black pepper.
