    Kumquat Compote

    Use this to fill a sponge cake, along with 150ml double cream, lightly whipped. You may have a little compote left over - it's delicious on ice cream

    • Preparation time: 20 minutes
    • Cooking time: 30 minutes, plus cooling
    • Total time: 50 minutes 50 minutes

    Serves: 4 - 6


    • 400g kumquats
    • 250g caster sugar


    1. Remove the stalks from the kumquats and cut each into four. Remove the pips. Put the kumquats in a saucepan with the sugar and 250ml water and bring them up to a simmer. Then let them cook very gently, uncovered, for 20-30 minutes, or until tender. Pour into a bowl and allow to cool.
