    Braised red cabbage with winter fruits

    Serves: 8


    40g unsalted butter

    1 large red onion, peeled, quartered and finely sliced

    1 small red cabbage, quartered and finely sliced

    100ml water

    ½ tsp ground allspice

    ¼ tsp ground nutmeg

    1 bramley apple, peeled, cored and grated

    4 plums, stones removed and cut into eight

    3 small pears, peeled, cored and cut into small chunks

    ½ stick cinnamon

    4 tbsp red wine vinegar

    50ml port

    3 tbsp light brown muscavado sugar

    1 tbsp redcurrent jelly

    1. Melt the butter in a large pan then add the onion and cabbage. Cook on a medium heat for 5 minutes just to gently soften, then add all the other ingredients with 100ml of cold water.  Stir thoroughly and season with salt and pepper.

    2. Bring to the boil, cover with a lid and cook on a low to medium heat for approx 1 hour.  Check that the cabbage is tender by using a spoon to push against the side of the pan.  If the cabbage is still tough then cover again and cook for another 10 minutes.

    You can now set this aside and keep warm until needed.
