    Lacy Almond Biscuits

    • Vegetarian
    • Preparation time: 10 minutes
    • Cooking time: 12 minutes to 15 minutes
    • Total time: 22 minutes to 25 minutes 25 minutes

    Makes: 20 biscuits


    • 50g unsalted butter
    • 50g golden syrup
    • 50g caster sugar
    • 1 tbsp Grand Marnier
    • 50g ground almonds
    • 25g plain flour


    1. Preheat the oven to 180°C/gas 4. Line two baking sheets with greaseproof.
    2. Put the butter, syrup, sugar and Grand Marnier in a small pan and heat gently until the sugar has melted. Stir in the ground almonds and flour and allow to bubble gently for a minute or two.
    3. Place 4 teaspoonfuls of the mixture, well apart, on one tray. Bake for 2-3 minutes, or until the biscuits have spread and turned golden, with slightly darker edges. Leave for a minute, then gently lift each biscuit with a palette knife. Curve over a rolling pin or other cylindrical object. If the biscuits harden before you curl them, pop them back in the oven for a few seconds. While you are curling one lot, cook another batch on the other tray. Repeat with all the mixture. Cool the curled biscuits on a wire rack.
