    Lime and Coriander Bream

    The delicately flavoured white flesh of red sea bream makes it ideal for baking or grilling. Use it whole or in steaks. The fragrant lime mixture caramelises slightly on the underside leaving the fish moist underneath.

    Serves: 4


    • 2tbsp olive oil
    • 1tsp clear honey
    • Juice and zest of ½ lime
    • 1 clove garlic, crushed
    • 2.5cm piece root ginger, peeled and finely grated
    • 1tbsp fresh coriander, finely chopped
    • ½tsp each of ground cumin and ground coriander
    • Salt & freshly ground black pepper
    • 4 red sea bream steaks, each weighing approximately 175g


    1. Mix together all the ingredients except the fish.
    2. Place steaks on a foil-lined grill rack. Spread one side of each steak with half the lime mixture.
    3. Place under a preheated medium grill for 5-6 minutes. Turn steaks over, spread with remaining mixture and grill for a further 5-6 minutes or until the fish is cooked. This dish needs only simple accompaniments such as new potatoes and a green vegetable.
