Marie's Almond Slices

Ingredients

225g self-raising flour

100g cold butter, cubed, plus extra for greasing

1 egg yolk

Topping

2 eggs

2 tbsp apricot jam

100g caster sugar

100g icing sugar

175g ground almonds
-
50g flaked almonds
Method

Make the pastry. Sift the flour into a bowl. Add the butter and rub in with your fingertips until the mix resembles breadcrumbs. Add the egg yolk and enough cold water to make a firm dough. Chill for 30 minutes. Meanwhile, preheat the oven to 180°C/gas 4 and butter a 30 x 23cm swiss roll tin.

Roll out the pastry to a thickness of a £1 coin, or to fit the tin. Press into the tin, trimming off excess.

Thin the apricot jam slightly by mixing with a little water, then spread thinly over the pastry. Beat the sugars, almonds and eggs to a smooth paste and spread over the jam. Smooth the top and sprinkle with the flaked almonds.

Bake for 25 minutes, or until pale brown. Slice in the tin, then leave to cool before serving.
