Marinated chargrilled vegetables

1 tbsp clear honey
1 tbsp extra virgin olive oil
2 sprigs mint, leaves finely chopped
2 sprigs Waitrose Cooks’ Ingredients Rosemary, leaves finely chopped
1 tbsp balsamic vinegar
Zest and juice of 1 lemon
230g pack Waitrose Asparagus, trimmed
1 red pepper, quartered
1 courgette, cut into 4, lengthways
1 aubergine, cut into 4, lengthways
1. Mix the honey, oil, herbs, vinegar and lemon zest and juice, then season to taste. Toss in the vegetables and marinate for 15 minutes.
2. Place the vegetables in batches on the barbecue for 5-10 minutes, depending on the vegetable, until slightly charred. Pour over the remaining marinade and arrange on a platter.
