    Marinated Chicken and Tomato Salsa

    • Preparation time: 15 minutes, plus marinating
    • Cooking time: 10 minutes
    • Total time: 25 minutes, plus marinating 25 minutes

    Serves: 2


    • Chicken Marinade
    • 1 tbsp lemon juice
    • 1 clove garlic, crushed
    • 1 sprig rosemary
    • Salt and freshly ground black pepper
    • 4 tbsp olive oil
    • 1 sprig thyme
    • Courgette Marinade
    • 1 clove garlic, crushed
    • 4 tbsp olive oil
    • 1 sprig thyme, finely chopped
    • 3-4 basil leaves, torn
    • 2 chicken breasts, skinned and flattened
    • 1 large courgette, cut lengthways into thin slices
    • Tomato Salsa
    • 1 tbsp lemon juice
    • 4 tbsp olive oil
    • 2 tomatoes, diced (skin on)
    • ½ shallot, finely chopped


    1. Mix the chicken marinade ingredients. Pour over the chicken and marinate for 24 hours. Do the same with the courgette.
    2. Mix the salsa ingredients together and warm gently over a low heat. Season.
    3. Set a griddle pan over a high heat. Shake excess marinade from the chicken, and cook for 2-3 minutes each side. Rest in a warm place for 3-4 minutes while you griddle the courgette for 2 minutes each side. Serve the chicken on the courgette with salsa spooned around.
