    Mediterranean Sausages

    Serve Sweet Red Peppers & Coriander Sausages with a ratatouille-style mix of Mediterranean vegetables and potato wedges.

    Serves: 4


    • 8 Sweet Red Peppers & Coriander pork sausages
    • 2tbsp olive oil
    • 175g onion, peeled and finely chopped
    • 2 sticks celery, finely chopped
    • 2 red peppers, deseeded and finely diced
    • 1 aubergine, about 225g, diced
    • 150ml red wine
    • 500g passata or chopped tomatoes


    1. Heat the oil in a large saucepan and add the onion, celery and peppers. Sauté for 10 minutes, stirring to prevent browning. Add the aubergine and cook for a further 5 minutes. Add the red wine and passata, stir then simmer for 25 minutes.
    2. Fry the sausages over a low heat for 20 minutes or until thoroughly cooked and golden brown all over. Serve the sausages with the vegetable ratatouille.
