    Mediterranean Seafood Crumble

    • Preparation time: 5 minutes
    • Cooking time: 25 minutes

    Serves: 4


    • 500 g jar Seeds Of Change Tomato And Sweet Pepper Organic
    • 400 g Waitrose Frozen Fruits De Mer
    • 420 g butter beans in water, drained and rinsed
    • 1 small white baguette, about 125g, roughly broken into chunks
    • 25g Parmigiano Reggiano, freshly grated
    • 2 tbsp fresh, roughly chopped marjoram or oregano


    1. Preheat the oven to 190C, gas mark 5. Put the sauce into a large pan and bring to the boil. Stir in the seafood and butter beans, simmer for 2-3 minutes then tip into a medium, ovenproof dish. Whiz the chunks of baguette in a food processor, to coarse breadcrumbs. Stir in the cheese and marjoram and scatter over.
    2. Bake for 20 minutes, until golden and bubbling hot and the seafood is cooked through. Divide between plates and serve with a mixed leaf salad.
