Mint and lemon ice

This is the lightest, most refreshing end to a meal. It can be prepared in advance, too. Serve in cups or glasses.
Serves: 6
2 limes, peeled and segmented
4 lemons, zest of 2 and juice of all
2 x 25g pack mint, leaves picked
200g caster sugar
100ml vodka
1. Using a food processor or stick blender, whizz all the ingredients together with 500ml water, until you have a smooth, greenish water. Pour into a freezeproof container and freeze, breaking up with a fork every hour or so, until it has frozen fully into ice flecks – about 5-6 hours. Scoop into glasses and top with a few extra mint leaves and some berries, if liked.
