    Mixed Crushed Potatoes

    Combining ordinary potatoes with the sweet variety, then adding a fresh herb dressing, makes a colourful accompaniment.

    • Preparation time: 15 minutes
    • Cooking time: 20 minutes
    • Total time: 35 minutes 35 minutes

    Serves: 6


    • 1.4kg potatoes, such as Maris Piper
    • 800g sweet potatoes
    • 100g butter
    • 15g pack fresh chives, chopped
    • 20g pack fresh flat-leaf parsley, chopped
    • 6 tbsp milk


    1. Peel all the potatoes and cut them into small chunks. Place in a saucepan, cover with water, bring to the boil and cook for about 20 minutes until tender.
    2. Meanwhile, melt the butter and stir in the herbs and plenty of black pepper.
    3. Drain the potatoes thoroughly and return to the pan. Add the milk. Using a potato masher, crush the potatoes until broken into smaller pieces but not completely mashed. Stir in the herb butter and spoon onto a serving plate.
