    Mojo Verde

    This garlicky coriander sauce is from Tenerife, where it's served with papas arrugadas - salt-crusted potatoes. You can make it a day ahead.

    • Preparation time: 5 minutes
    • Total time: 5 minutes plus chilling time 5 minutes

    Serves: 6


    • 1 large clove garlic, roughly chopped
    • 150ml extra virgin olive oil
    • 3 tbsp white wine vinegar
    • 80g pack coriander (stalks and all), chopped
    • 1 green chilli, deseeded and roughly chopped
    • 1 level tsp ground cumin
    • Salt and freshly ground black pepper


    1. Put all the ingredients in a blender. Blend until smooth, scraping down the sides regularly. This takes a little while, but persevere: the sauce should be smooth.
    2. Chill until needed.
