    Mulled Wine 1

    • Preparation time: 30 minutes
    • Cooking time: 15 minutes
    • Total time: 45 minutes, plus overnight chilling

    Serves: 4


    • 2 oranges
    • 1 lime
    • 350ml water
    • 4 whole cloves
    • 2 whole cardamom pods, split open
    • 200g light brown sugar
    • 1 bottle dry red wine
    • 1 whole vanilla pod, split open


    1. Preheat the oven to 180°C/gas mark 4. Pare the rind from the oranges and lime in strips with a vegetable peeler, taking care not to catch any of the bitter pith. Put the peel on a baking sheet and bake for 5 minutes.
    2. Bring the water to a boil over a high heat in a medium saucepan. Add the citrus peel, cloves, cardamom and brown sugar. Reduce the heat and simmer over a low heat for about 15 minutes. Cool the syrup then leave it to steep overnight, or for as long as possible. Strain the syrup and set aside. Heat the red wine in a non-corrodible pan, just to a simmer. Add the syrup and continue to heat over a very low heat for 10 minutes or so until piping hot but not boiling. Serve with the vanilla pod floating on top.
