    Nectarines with Almonds and Amaretto

    Serves: 4


    • 55g butter
    • 70g caster sugar
    • 6 ripe nectarines, halved and stoned
    • 100g whole almonds
    • 50ml Amaretto Di Saronno
    • 100ml water
    • Zest and juice of 1 lime
    • 4 tbsp double or clotted cream


    1. Gently melt the butter and add the sugar to make a light caramel. Add the nectarines cut side up and cook gently for 5 minutes.
    2. Add the almonds, turn the nectarines and cook for a further 5 minutes, taking care that the sugar does not burn around the sides.
    3. Carefully pour in the Amaretto and water and bring to the boil. Serve the nectarines and syrup with the lime zest and juice drizzled on top and the cream on the side.
