Olive and Grapefruit Salad
Ingredients

1 pink or red-fleshed grapefruit

1 avocado

3 tbsp flat leaf parsley

85g black and green olives

115g brie
-
1 tbsp cider vinegar

2 tbsp olive oil

Pinch of sugar

Pinch of salt

Freshly ground black pepper

Method

Peel and segment 1 pink or red-fleshed grapefruit, removing any pith and reserving any juice. Mix together the grapefruit segments with 1 avocado, peeled and sliced, 3tbsp flat leaf parsley, 85g black and green olives with herbs, and 115g brie, cubed.

Place the reserved juice, 1tbsp cider vinegar and 2tbsp olive oil into a screw-topped jar with a pinch of sugar, salt and freshly ground black pepper and shake well. Arrange the salad on a bed of rocket, pour the dressing over the top and serve.
