Pan-fried Halloumi with Chilli

Ingredients

2 tbsp chopped, deseeded fresh red chilli (3-4 medium chillies)

4 tbsp extra virgin olive oil

2 x 250g packets Halloumi cheese, sliced medium-thin

Juice of ½ lemon
Method

Mix the chopped chilli and olive oil in a small bowl and leave while you cook the cheese. Heat a non-stick frying pan over a medium heat, without any oil, and fry the cheese slices for about 2 minutes a side until golden-brown in parts. When all are cooked, transfer to a couple of small plates. Stir the chilli oil, spoon it over the cheese, then give a spritz of lemon and serve.
