    Pan-Fried Peaches with Calvados

    • Preparation time: 12 minutes
    • Cooking time: 7 minutes to 10 minutes
    • Total time: 17 minutes to 22 minutes 25 minutes

    Serves: 4


    • 25g butter
    • 3 tbsp clear honey
    • 4 ripe peaches, washed, halved and stoned
    • 3-4 tbsp Calvados
    • Mascarpone cheese


    1. Preheat the oven to 200°C/gas mark 6.
    2. Gently melt the butter and honey in a large ovenproof frying pan. Stir until well mixed. Once the mixture starts to bubble, add the peaches, cut side down. Cook for 5 minutes until the peaches are beginning to colour. Flip the fruit over, splash in the Calvados and allow the juices to bubble up. Immediately transfer the whole pan to the oven. Cook the peaches for 7-10 minutes until they are tender and the juices very syrupy.
    3. Put scoops of mascarpone on 4 serving plates. Sit 2 peach halves on each and drizzle over the hot pan juices. Serve immediately with biscotti or amaretti biscuits.
