    Pea, rocket and feta salad with croutons

    • 50 g ciabatta
    • 1 clove garlic, crushed
    • 2 tbsp olive oil
    • 25 g rocket
    • 25 g pea tops
    • 2 sprigs fresh mint, leaves only, torn
    • 75g peas or broad beans, podded and blanched
    • 50g vegetarian feta cheese, crumbed
    • 1 tbsp creme fraiche
    • ½ tsp Dijon mustard


    1. Preheat the oven to 200 °C, gas mark 6.
    2. Break the ciabatta into bitesize chunks, coat with the garlic and 1 tbsp of the olive oil. Spread out onto a baking tray and bake for 10 minutes until golden and crunchy.
    3. Meanwhile, place the rocket and pea tops into a serving bowl. Add the mint leaves along with the peas (or broad beans) and feta cheese. Top with the ciabatta croutons.
    4. Then make the dressing: whisk the creme fraiche, mustard, 1 tbsp cold water and the rest of the oil with a little seasoning. Drizzle the dressing over the salad and serve.
