    Pears in Mulled Wine

    Serves: 4


    • 4 large Conference pears
    • 75g demerara sugar
    • 2 wide strips of orange peel
    • 2 wide strips of lemon peel
    • Bart Spices whole cinnamon stick
    • 500ml medium-bodied red wine


    1. Pour 500ml medium-bodied red wine into a saucepan and add a Bart Spices whole cinnamon stick, 2 wide strips each of lemon and orange peel and 75g demerara sugar. Bring to boil, reduce heat and simmer for 5 minutes. Peel, quarter and core 4 large Conference pears and add to pan.
    2. Cover and simmer for 20 minutes, until pears are tender. Remove with a slotted spoon and boil sauce vigorously for 5 minutes to make a syrup. Remove cinnamon stick, lemon and orange peel. Pour sauce over pears and serve warm or cold.
