    Penne with pepperonata

    A fast mid-week recipe, packed full of your five a day.

    Serves: 4


    • 2 red peppers, cored and deseeded
    • 2 yellow peppers, cored and deseeded
    • 2 tbsp olive oil
    • 1 essential Waitrose onion, thinly sliced
    • ¼ tsp crushed chillies
    • 500g tub essential Waitrose tomato and basil sauce
    • 360g essential Waitrose penne
    • 6 large basil leaves, torn


    1. Cut the red and yellow peppers into 2cm cubes. Heat the oil in a large frying pan over a low heat and stir in the peppers. Season and cook on a medium-high heat for 10 minutes, stirring regularly. Add the onions and chillies, reduce the heat to medium-low and cook for a further 15 minutes, stirring occasionally, until everything is soft.
    2. Add the tomato sauce and 150ml water; simmer. Meanwhile, cook the penne according to the packet instructions.
    3. Drain the cooked pasta; toss it in a bowl with the pepperonata and torn basil and serve.
