    Pepper Salami Risotto

    Germany is famous for its spicy sausages, pâtés, hams and salamis. We bring you a selection of traditional favourites for you to enjoy.

    Serves: 2


    • 2 shallots
    • 300g risotto rice
    • 125ml white wine
    • 1litre chicken stock
    • 55g grated parmesan cheese
    • 65g butter
    • 1 German Pepper Salami
    • 2tbsp fresh parsley
    • Salt
    • Freshly ground pepper


    1. Soften 2 finely chopped shallots in 40g butter. Stir in 300g risotto rice. Add 125ml white wine. Heat until it has evaporated, gradually add 1 litre hot chicken stock. Cook, stirring, for 25-30 minutes until the rice is creamy and cooked. Stir in 55g grated parmesan cheese, 25g butter, 1 German Pepper Salami† , chopped, and 2tbsp chopped fresh parsley. Season with salt and freshly ground black pepper.
