Perfect Roast Potatoes 1

You can also add it to one of your existing cookbooks
You would usually use sunflower oil but, for extra flavour, use Catusse Graisse d'Oie goose fat, which you'll find with the butters.
When the oven is full, potatoes are hard to brown. You can crisp your cooked potatoes in a hot oven, 200°C, gas mark 7, when you have taken out the turkey and it is resting before carving.
