    Perfect Roast Potatoes 1

    You would usually use sunflower oil but, for extra flavour, use Catusse Graisse d'Oie goose fat, which you'll find with the butters.

    • Cooking time: 60 minutes to 75 minutes
    • Total time: 1 hour 15 minutes to 1 hour 30 minutes 60 minutes 30 minutes

    Serves: 6


    • 1kg floury potatoes such as King Edward or Maris Piper
    • 3 tbsp sunflower oil or goose fat
    • Sea salt


    1. Peel the potatoes and cut into large chunks. Put in a saucepan of cold water and bring to the boil. Cook for 3-5 minutes until the outside starts to soften. Drain.
    2. Return them to the empty but still warm pan. Leave off the heat for a few minutes to dry the potatoes. Shake the pan to roughen the surface of the potatoes.
    3. Put the oil or goose fat in the base of a roasting tin. Heat in the oven for 5 minutes. Add the potatoes and toss gently to coat. Roast at 190°C, gas mark 5 for 45 minutes or until golden. Serve sprinkled with sea salt.

    Cook's tips

    When the oven is full, potatoes are hard to brown. You can crisp your cooked potatoes in a hot oven, 200°C, gas mark 7, when you have taken out the turkey and it is resting before carving.
