    Pistachio Tuiles

    You'll need a non-stick Teflon cooking mat, available in Waitrose, to make the tuiles.

    • Preparation time: 25 minutes plus cooling
    • Total time: 25 minutes plus cooling 25 minutes

    Makes: about 20 pieces


    • 30g pistachios
    • 20g ground almonds
    • 2 medium egg whites
    • 75g caster sugar
    • 10g plain flour


    1. Preheat the oven to 150°C, gas mark 2.
    2. Grind the pistachios in a food processor or pestle and mortar until they have a similar consistency to the ground almonds. Place in a bowl with all the other ingredients and mix thoroughly.
    3. Lay a non-stick Teflon baking mat on a baking sheet and pour the mixture on to it, spreading it as thinly as you can - it should be about 2mm thick. Bake for 10-15 minutes until golden (you don't want it to darken too much or it will lose the pale-green pistachio colour).
    4. Leave to set, then break into shards to serve.
