    Plum and Cardamom Eton Mess

    This dish is a fragrant variation of the classic dessert Eton Mess, which is usually made with raspberries. It's simple to make but impressive and utterly moreish!

    • Cooking time: 15 minutes to 20 minutes
    • Total time: 30 minutes to 35 minutes 35 minutes

    Serves: 6

    Ingredients

    • 350g English plums
    • 2 tbsp caster sugar
    • 6 Bart Spices Cardamom Pods, lightly crushed
    • 2 meringue nests, crushed
    • 200ml Waitrose Natural Yogurt
    • 200ml Waitrose Double Cream, lightly whipped

    Method

    1. Halve and stone the plums and place them in a large pan. Add the sugar, cardamom and 5 tbsp of water. Bring to a gentle simmer and cook for 15-20 minutes, until the plums are tender.
    2. Set aside until cold, then remove the cardamom pods and mash the plums roughly with a fork.
    3. Mix the yogurt and cream together and gently stir in the plums and crushed meringue nests. Serve immediately in individual glass dishes.

    Cook's tips

    If the plums are slightly under-ripe, you may need to give them an extra five minutes cooking time. If you don't like the flavour of cardamom, add a cinnamon stick instead.
