    Poached Apricots

    • Preparation time: 5 minutes to 10 minutes
    • Cooking time: 20 minutes to 25 minutes
    • Total time: 25 minutes to 35 minutes 35 minutes

    Serves: 8


    • 250g semi-dried apricots or 16 ripe fresh apricots
    • 1 cinnamon stick
    • 1 tbsp honey
    • 1 tbsp soft brown sugar
    • 1 vanilla pod, split in half
    • 1 orange, juiced and zest finely grated
    • ½ tsp ground allspice


    1. If you're using fresh apricots, halve and stone them. Place all the ingredients in a pan, with 500ml water, over a medium heat. Simmer gently for 10-12 minutes until the fruit is soft. Remove the fruit with a slotted spoon.
    2. Increase the heat until the liquid is boiling, then boil until reduced by one third. This will take 10-15 minutes. Remove the vanilla pod. Serve the fruit warm in its syrup with the warm pistachio nut cake.
