    Poached Pears with Fromage Frais

    • Cooking time: 30 minutes
    • Total time: 40 minutes 40 minutes

    Serves: 4


    • 4 conference pears
    • grated zest and juice of 1 unwaxed lemon
    • 75ml Belvoir Spiced Winter Berries Cordial, or Pixley Berries Blackcurrant Superfruit Cordial
    • 50 g Waitrose Wholesome Roasted Marcona Almonds
    • 200 g Waitrose French Natural Fromage Frais
    • 1 tbsp waitrose cooks' ingredients vanilla sugar


    1. Peel the pears, leaving the stalks intact, then place in a small pan. Mix together the lemon zest and juice, cordial, and 300ml of water. Pour over the pears.
    2. Bring to the boil and simmer gently for 20-30 minutes (depending on ripeness of the pears), turning from time to time, until just tender. Turn off the heat and leave to cool. Chill until ready to serve.
    3. Lightly crush the almonds with a rolling pin or in a pestle and mortar. Stir into the fromage frais along with the vanilla sugar.
    4. Spoon the pears into individual serving dishes and spoon over some of the fruit liquor. Top each with a good dollop of the almond fromage frais.

    Try poaching apples in the same way as these delicious pears, but allow an extra 10 minutes’ cooking time.
