    • 1 tablespoon sunflower oil
    • 125g popcorn maize
    • 55g unsalted butter
    • ½ teaspoon fine sea salt
    • Savoury flavouring:
    • A generous pinch of cayenne pepper
    • Sweet flavourings:
    • 1 tablespoon honey
    • ½ - ¾ teaspoon ground cinnamon
    • 2 tablespoons light muscovado sugar
    • 1 tablespoon organic cocoa


    1. Heat the oil in a large saucepan. Add the popcorn maize, stir, cover and place over a low heat. Regularly shake the pan until all the corn has popped.
    2. Meanwhile melt the butter in a small pan. If making the cocoa variation, melt the butter with the sugar and cocoa. If making the honey and cinnamon version, add the honey.
    3. As soon as the popcorn has popped, tip into a large bowl and season with salt. If making a savoury variation, pour over the butter and season to taste with the cayenne pepper; otherwise, add the cocoa butter or honey butter and mix thoroughly. The latter should then be seasoned to taste with cinnamon. Tip into a bowl and head back to the sofa.
