Pork with apple & squash mash

1 tbsp oil
1 leek, finely sliced
500g bag frozen essential Waitrose Butternut Squash
1 red apple, coarsely grated
2 pork loin steaks
1. Heat the oil in a large saucepan and fry the leek, squash and apple, covered for 10 minutes, stirring occasionally. Season and roughly mash to give a coarse texture.
2. Meanwhile, season the pork and place under a preheated grill for 5 minutes each side or until cooked throughout with no pink meat. Serve with the apple and squash mash.
