    Pork Fillets with Tomato, Lardons and Sage

    • Preparation time: 5 minutes
    • Cooking time: 25 minutes
    • Total time: 30 minutes 30 minutes

    Serves: 4


    • 1 tbsp olive oil
    • 125g bacon lardons
    • 2 pork fillets, about 500g each, cut in half
    • Salt and freshly ground pepper
    • 20 cherry tomatoes on the vine
    • 16 sage leaves, finely chopped, plus extra for garnish


    1. Preheat the oven to 200˚C, gas mark 6. Heat the oil in a frying pan over a moderate heat and add the lardons. Fry until golden, remove from the pan with a slotted spoon and put in a roasting tray. Season the pork and add to the pan with the fat from the lardons.
    2. Cook for 2-3 minutes on each side to seal, then place in the tin with the lardons. Rest the tomatoes on the pork. Throw the sage into the roasting dish, season the whole lot and roast for 25 minutes. Rest in the oven while you finish eating the starters. Serve, garnished with more sage, with wilted spinach.
