    Pork Rosti Bake

    Waitrose Pork is reared under the Farm Assured Pork Scheme, which means all pigs are fed a cereal-based diet free from animal products, and are reared in fields or large barns. This recipe uses Waitrose Rösti which comes in longlife packs and makes a great store cupboard standby. For a lower fat alternative to the rösti topping, use mashed potato mixed with a little skimmed milk.

    • 2 tsp olive oil
    • 1 onion, finely chopped
    • 2 garlic cloves, crushed
    • 500g pack Waitrose British Ground Pork
    • 400g can Waitrose Chopped Tomatoes
    • 1 tbsp tomato purée
    • 1/2 tsp caster sugar
    • 2 tbsp chopped fresh thyme leaves
    • Salt
    • Freshly ground black pepper
    • 400g pack Waitrose Rösti


    1. Preheat the oven to 200°C, gas mark 6. Heat the oil in a large saucepan and add the onion and garlic. Cook over a gentle heat for 3-4 minutes, until softened. Add the ground pork and cook, stirring to break up the pork, for a further 3-4 minutes, until browned.
    2. Add the tomatoes, tomato purée, sugar and thyme leaves and allow to simmer for 15 minutes until thickened slightly. Remove from the heat and season to taste.
    3. Spoon the pork mixture into a 1 litre shallow ovenproof dish. Using your fingers, roughly crumble the rösti and sprinkle evenly over the pork mixture. Bake for 25 minutes, until the topping is crisp and golden. Serve with a crisp green salad or steamed spring greens.
